Chocolate Lava Cake

A dessert for 2.  This is a quick dessert that you can whip up and impress that special someone.

Ingredients

For 2 Person(s)

Cake

42 g butter, unsalted, melted
1 lg egg, room temperature
3 tbsp whole milk
1/4 tsp vanilla extract
35 g Frankie's gluten-free all-purpose flour blend
57 g white sugar
2 tbsp cocoa, unsweetened
1/4 tsp instant coffee
1/8 tsp baking soda
1/8 tsp Kosher salt
57 g chocolate chips, finely chopped
2 tbsp hot water

Chocolate Lava Cake Directions

Using a medium or large soup bowl, place butter in bowl and swirl around to coat the walls.  Stir in the rest of the wet ingredients.  Whisk in the Frankie's gluten-free all-purpose flour blend, sugar, cocoa, instant coffee, baking soda and salt and whisk until everything is lump free.

Sprinkle the top with your chocolate chips. And then drizzle the water on top.  Don't stir the chocolate chips or water in.

Microwave on high for 1 minute and 40 seconds and check for doneness.  Continue if needed in 10 second intervals, however you want to make sure that you don't over-cook the cake as it's supposed to have a gooey centre.  If the top is fully cooked and not gooey, then it's done.

Let it rest in the microwave for 1 minute and then remove.  Take a small pallet knife or knife and sut around the edge and place a plate on top.  Flip the whole thing over and remove the bowl. 

You should have a flowing lava cake.  Enjoy.
