Brown Sugar Peach Cake
Sink your teeth into this cake. Moist and full of flavour. And best of all, you can substitute the peaches for almost any stone fruit or berry.

| 3 cups Frankie's gluten-free all-purpose flour blend |
| 1 1/2 tsp baking powder |
| 1 tsp baking soda |
| 1 tsp ground cinnamon |
| 1 tsp Kosher salt |
| 1 cup butter, unsalted, softened |
| 1 cup packed brown sugar |
| 3 lg eggs |
| 1 tsp vanilla extract |
| 1 cup buttermilk |
| 3 medium peaches, peeled, pitted and chopped |
Icing
| 3/4 cup packed brown sugar |
| 1/2 cup butter, unsalted |
| 1/4 cup whole milk |
| 1/4 tsp Kosher salt |
| 1 cup powdered sugar, or confectioners sugar |
| 1 tsp vanilla extract |
Brown Sugar Peach Cake Directions
Preheat oven to 350°F or 175°C and grease a 13" by 9" (33 X 23 cm) baking dish with cooking spray. In a large bowl whisk the Frankie's gluten-free all-purpose flour blend with the baking powder, soda, cinnamon and Kosher salt.
Using a hand mixer, on medium high speed, beat butter and brown sugar until light and fluffy. Add eggs one at a time beating well after each addition, then beat in the vanilla. Add dry ingredients and mix until just a few streaks remain. Add buttermilk and mix until just combined. Fold in peaches by hand and pour into prepared pan and spread in an even layer. Bake until a tester inserted comes out clean, approximately 30-35 minutes.
Preparing the icing: melt butter in a pan and add brown sugar, milk and Kosher salt. Bring to a boil and let boil for 60 seconds. Remove from heat and immediately beat in powdered sugar and icing sugar. Beat until smooth. Pour onto cake and allow to setup before removing from pan.
