Pineapple Upsidedown Cake
Super easy

This is a show-stopper kind of cake.  With the vanilla cake and flavour explosion from the pineapple, you're sure to make a few go ooh, and ahh.

Ingredients

Topping

60 g butter, unsalted, melted
100 g brown sugar
8 pc pineapple slices
6 pc strawberries

Cake

115 g butter, unsalted, softened
150 g white sugar
2 lg eggs
1 tsp vanilla
195 g Frankie's gluten-free all-purpose flour
1 1/2 tsp baking powder
1/4 tsp Kosher salt
120 ml milk, whole is preferred, but you can use anything

Pineapple Upsidedown Cake Directions

Preheat your oven to 350°F or 175°C.

*Remember when working this recipe we're starting with the top and finishing with the bottom.

Topping:
Pour melted butter into a 9.5-10inch (25cm) pie plate or cake pan.  Make sure that the butter entirely covers the bottom of the pan and use a spoon or spatula to grease the sides of the pan.  Sprinkle brown sugar evenly over the butter mixture.  Arrange pineapple slices over the bottom of the pan, slice left over pieces in half and arrange them up the sides of the pan.  Place strawberries, or cherries in the centre of each pineapple ring and (if desired) through out the empty spaces.

Cake:
Beat the butter, and sugar in a medium sized bowl until creamy and well combined.  Add eggs, one at a time until combined.  Next the vanilla.

In a separate bowl whisk together the Frankie's gluten-free all-purpose flour, baking powder, and salt.

Alternate adding flour and milk to the wet ingredients, starting and ending with flour and mixing until just combined after each addition.

Pour batter evenly over the prepared cake pan over the pineapple/fruit layer.

 

Bake in your pre-heated oven for 30 minutes, and then cover it with tin foil and bake for an additional 15 minutes or until a toothpick inserted comes out clean.  Allow to cool for 10-15 minutes and then carefully invert onto a serving platter - the cake will be hot, so be careful.

Allow to cool (not completely) before serving. Then enjoy with friends and family.
