Caramel "Coffee" Cake
Sink your teeth into this easy to make cake. Loads of coffee to perk you up and just a slight hint of sugar to round it all out. Enjoy.

Ingredients
Cake
| 175 g butter, unsalted, softened - plus more for greasing the pan |
| 175 g super fine sugar |
| 3 lg eggs |
| 225 g Frankie's gluten-free all-purpose flour |
| 1 tbsp baking powder |
| 1/4 tsp Kosher salt |
| 100 ml strong black coffee |
| 1 handful chocolate covered coffee beans - for decoration |
Frosting
| 125 ml Milk |
| 125 g butter, unsalted |
| 3 tbsp superfine sugar |
| 575 g confectioners' sugar |
Caramel "Coffee" Cake Directions
Mix:
Grease and base-line 2 8 inch (20 cm) sponge cake pans. Place the butter and sugar in a bowl and beat together until light and fluffy. Gradually beat in the eggs, then mix in the flour and coffee. Divide the batter among the prepared pans and bake in a preheated oven of 350°F / 175°C for 10-15 minutes (keep an eye on your cakes. The thinner they are in the pan the less time they'll take to bake). Bake until the cake is springy when pressed in the centre. Let cool for 5 minutes in the pans then turn out and peel off the lining paper and transfer to wire racks to cool completely.
Frosting:
To make the frosting, place the milk and butter in a pan, set over low heat, and stir until the butter has melted. Remove the pan from the heat and set aside. Place the superfine sugar in a separate, heavy-bottom pan and set over low heat, stirring constantly, until the sugar dissolves and turns a golden caramel. Remove from the heat and stir in the warm milk mixture. Return to the heat and stir until the caramel dissolves.
Remove from the heat and gradually stir in the confectioners' sugar, beating until the frosting is a smooth spreading consistency. Join the cakes together with some of the frosting and spread the rest over the top and sides. Decorate with chocolate covered coffee beans.
