Chocolate Matzo Layer Cake

1 3/4 cups chopped dark chocolate (or chocolate chips) |
2 cups heavy cream (divided) |
1 1/2 cup coffee, warm |
5 pieces matzo sheets |
Chocolate Matzo Layer Cake Directions

Then heat 1/2 of the heavy cream in a pot under medium/low heat. You don't want to heat this too quickly as it will scorch the bottom of the pan. When the cream is hot turn the stove off and add the chocolate and whisk together until nicely blended. Set aside.
In a large bowl add the remaining heavy cream and whip to medium peaks. Fold into the chocolate mixture and set aside.
Pour your coffee onto a baking sheet with edges. Break your matzo sheets to the length of the serving dish and soak the sheets in the coffee for about 30 seconds on each side. Make sure that coffee covers the whole matzo sheet to help soften it up a bit.
Begin with a layer of coffee soaked matzo covering the entire bottom of your serving dish. Then take about 1/4 of the chocolate/cream mixture and spread it over the sheet. Repeat this process three more times ending with the chocolate mousse on the top. *Feel free to brush more coffee on each matzo sheet just before you spread the chocolate mousse on top.
Once the last layer of chocolate mousse is on, cover with plastic wrap and put in the fridge over night. This lets the chocolate set and the coffee soften the matzo sheets.
Cut into squares and enjoy. Serve chilled and store any remaining pieces in the fridge.
