Chocolate Sugar Cookies

2 cups Frankie's gluten-free all-purpose flour blend
1/2 cups cocoa powder
1 tsp baking soda
1/2 tsp Kosher salt
16 tbsp butter, softened
1 1/2 cups dark brown sugar
1 lg egg
1 tsp vanilla extract
1/2 cup white granulated sugar for rolling

Chocolate Sugar Cookies Directions

Preheat your oven to 350°F or 175°C

Line a baking sheet with parchment paper.

 

Place the Frankie's gluten-free all-purpose flour blend, cocoa, baking soda and salt in a medium bowl and whisk to combine the ingredients.  Set aside.

Place the butter into a stand mixer and beat on high until light and creamy.  Scrape down the sides of the bowl and beat one more time.  Scape down the walls again and add the brown sugar (It's important to use dark brown sugar as there is more molasses in this than golden brown sugar).  Beat on high for another 60 seconds, then scrape down the walls of the mixer again and beat on high.  Scrape down the walls once more and add the egg and vanilla and beat until the egg is thoroughly incorporated.

Add the dry ingredients and mix on low speed until no flour is visible, stopping to scrape down the mixer once during the process.

 

Pour the granulated sugar into a bowl.  Portion out the dough using a 2-tbsp scoop or measure  or a scale - each portion should weight about 50 grams.  By the time your're down you will have 16-18 portions of dough.  Roll each portion between your hands to form a ball then roll in the sugar coating each ball as generously as you can.  Transfer 6 balls to the prepared baking sheet and bake for 12 minutes.  Remove from heat and allow cookies to cool complely on the sheet pan.  Repeat this process baking 6 cookies at a time.

 

Cookies can be stored in an airtight container for up to a week or frozen for up to 3 months.
