Black Cat Cookies
A touch of nostalgia is what this cookie brought me... that and its chewy centre and crisp outer edge. Yum.

Ingredients

1/3 cup unsalted butter, soft |
1/3 cup white sugar |
1 lg egg |
2/3 cup honey |
1 tsp vanilla |
2 3/4 cups Frankie's gluten-free All-purpose flour blend |
1 tsp baking soda |
1 tsp Kosher salt |
1/2 cup chocolate chips (for decorations) |
Black Cat Cookies Directions
Begin by mixing the butter, sugar, egg, honey and vanilla in a mixing bowl.
Stir in your Frankie's gluten-free all-purpose flour blend, baking soda and salt. Mix until all is combined.
Scoop the dough onto some plastic wrap. Wrap it up and chill in the fridge for about 35-45 minutes or until firmed up.
Pre-heat your oven to 375°F or 190°C.
Unwrap the dough and make walnut sized balls and place them on a well greased, or parchment paper lined baking sheet. Space them out evenly so there is lots of room between each cookie.
With a small piece of plastic wrap lay it on top of a cookie ball and lightly press the cookie flat, with the bottom of a flat measuring cup, to a thickness of 9mm or 3/8 inch. Remove the plastic wrap and press the rest of the cookies.
Bake for about 8 minutes or until lightly browned.
Remove from oven and immediately start adding some pieces of chocolate on each cookie. You want three pieces in the centre to form a rounded triangle and a single chocolate chip on the top and one near the bottom.
Add all of the chocolate chips to the cookies as mentioned above and starting with the first cookie take a skewer or toothpick and start rounding the three chips together to make a solid circle. Then with the chip above the now circle of chocolate round this out to a smaller circle and add two pointed ears. With the third piece of chocolate drag this slightly down and to the left or right to give your cat a slightly pointed tail.
The video that I've got for this recipe will give you lots of input on how to make the cat. And if you mess up, that's ok, it's just more cookies to eat before you show anyone what you've made. ;)
A single batch will make about 18 - 3 inch (7.5cm) cookies.
