Luscious Lemon Bars
These do their name justice. They are luscious, lemony and so delightful. I think I ate about half of them in the first day myself.

Ingredients
Base
| 150 g Frankie's gluten-free all-purpose flour blend |
| 90 g butter, unsalted, chilled, diced |
| 50 g icing (confectioners) sugar |
Topping
| 2 lg eggs |
| 175 g caster sugar |
| 1 lg lemon, zested and juiced |
| 1 tbsp Frankie's gluten-free all-purpose flour blend |
| 1/2 tsp Baking soda |
| 1 tbsp icing (confectioners) sugar - for dusting at the end |
Luscious Lemon Bars Directions
Begin by pre-heating your oven to 350°F or 175°C and line the base of an 8 x 8 inch (20 x 20 cm) square shallow cake tin. Grease the sides and set aside.
In your mixer combine Frankie's gluten-free all-purpose flour blend with the butter and icing sugar and process it until it comes together as a firm dough. Press evenly into the base of the tin and spread smoothly using the back of a tablespoon. Bake for 12-15 minutes until lightly golden. Cool in the tin.
To make the topping, whisk the eggs in a bowl until frothy, then add the caster sugar - a little at a time, whisking well between each addition. Whisk in the lemon juice, Frankie's gluten-free all-purpose flour and baking soda. Pour over the cookie base and bake for an additional 20-25 minutes until set and golden.
Let cool slightly, then cut into twelve bars and dust with icing sugar. Leave to cool completely before removing from pan.
