| 3 1/2 cups Frankie's Gluten-Free All Purpose Flour Blend |
| 1 Tbsp baking powder |
| 1 tsp baking soda |
| 1/2 tsp Kosher salt |
| 4 tsp ground cinnamon |
| 1/2 tsp ground cloves |
| 1/2 tsp ground all spice |
| 1 cup vegetable oil (light salad oil) |
| 1 cup honey |
| 1 1/2 cups granulated sugar |
| 1/2 cups brown sugar |
| 3 Lg eggs |
| 1 tsp vanilla extract |
| 1 cup warm coffee or strong tea |
| 3/4 cup citrus juice or brandy, or blend of the two. |
Lekach Directions
Preheat oven to 350F/175C
In a large bowl combine the flour, baking powder, baking soda, salt, 1/2 the white sugar and spices. Mix well. Create a well in the middle of the bowl and add all remaining ingredients. Mix well with a whisk.
Pour into a well oiled/buttered bundt pan filling to 2/3 full. Add remaining batter to a buttered/oiled loaf pan. Bake at 350F/175C for about 60 minutes or until a skewer comes out clean when inserted into the deepest part of the cake.
