A Jewish treat typically made by someone else, typically a relative, or the Rabbi of the synagogue to give to someone special to symbolise the hope of a "sweet" and prosperous new year.

Ingredients

Cake

3 1/2 cups Frankie's Gluten-Free All Purpose Flour Blend
1 Tbsp baking powder
1 tsp baking soda
1/2 tsp Kosher salt
4 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground all spice
1 cup vegetable oil (light salad oil)
1 cup honey
1 1/2 cups granulated sugar
1/2 cups brown sugar
3 Lg eggs
1 tsp vanilla extract
1 cup warm coffee or strong tea
3/4 cup citrus juice or brandy, or blend of the two.

Lekach Directions

Preheat oven to 350F/175C

In a large bowl combine the flour, baking powder, baking soda, salt, 1/2 the white sugar and spices.  Mix well.  Create a well in the middle of the bowl and add all remaining ingredients.  Mix well with a whisk.

Pour into a well oiled/buttered bundt pan filling to 2/3 full.  Add remaining batter to a buttered/oiled loaf pan.  Bake at 350F/175C for about 60 minutes or until a skewer comes out clean when inserted into the deepest part of the cake.
