Hamantaschen with Poppyseed Filling

Make your own homemade Hamantaschen with poppyseed filling. So easy to make and just in time for Purim.

Ingredients

For 1 Batch(es)

Filling

1 cup poppyseeds, ground
1/2 cups honey
1/2 cups milk
1 tbsp fresh lemon juice
1 tbsp sugar
1/4 tsp Kosher salt
1/2 tsp vanilla extract

Pastry

3/4 cups butter, unsalted, room temperature
2/3 cup white sugar
1 lg egg
1 tsp vanilla extract
1 tsp grated orange zest
2 1/4 cups Frankie's Gluten-Free All-Purpose Flour Blend
1/4 tsp Kosher salt

Hamantaschen with Poppyseed Filling Directions

Filling:

Grind all of the poppyseeds in a spice grinder until fine. 

Add ground poppyseeds to pot, orange juice and zest, vanilla, salt, milk, sugar, and honey.

Bring it to a boil and let simmer until it is thick.  (about 5 minutes).  A spatula should be able to go through the mixture and it should leave a path behind it without filling back in.

 

Pastry filling:

In a stand mixer, combine butter, and sugar and mix until nice and fluffy.  Scrape down the sides and add orange zest and egg.  Beat until light and fluffy.  Scrape down the sides of the bowl. Add vanilla, Frankie's Gluten-Free All Purpose Flour Blend and Kosher salt.  Combine until well blended.

(at this point you can wrap and chill the dough to rest in the fridge - it might make it easier to work with).

Roll out dough on a well floured surgace until it is 3mm (1/4inch) thick.  Using a 2 inch (5cm) circle cutter, cut out circles on the dough.  Lift one and place a tsp amount onto the centre.  Then fold using your eye, divide the circle edges into thirds and fold up one third, then the second side and finally the third.  Lightly brush with an egg wash.

Bake in a pre-heated oven of 350F/175C for 15-20 minutes or until golden brown.

Let cool and enjoy. Store in an airtight container for up to a week.
