Pecan Brownies

Sink your teeth into these pillow-like pecan brownies.

225 g butter, unsalted, room temperature
100 g brown sugar
1/2 tsp vanilla extract
1 lg egg
70 g dark chocolate, melted
125 g Frankie's gluten-free all-purpose flour blend
3/4 tsp baking soda
1/4 tsp baking powder
55 g pecans, chopped
1 tsp milk

Pecan Brownies Directions

Preheat your oven to 350°F or 175°C

Line an 8 x 8 inch (20 x 20 cm) baking pan.

Melt your chocolate and set aside.  Sift together the flour and the baking soda and baking powder and set aside.

In a stand mixer beat the butter and sugar until light and fluffy.  Then add in the vanilla extract and the egg and mix together.  Add the flour mixture, milk and chopped nuts to the bowl and stir until well combined.

Transfer the mixture into your prepared baking pan and smooth it.

Bake for 30 minutes or until firm to the touch (it should still be a little soft in the centre).  Remove from the oven and let cool completely before cutting into squares.

Store in an airtight container for up to 1 week.
