| 3 cups raspberries |
| 1/4 cup white sugar |
| 1 1/2 tbsp raspberry liqueur (or water) |
| 2 cups heavy cream (35%) |
| 1/2 cup powdered sugar |
| 1/2 cup granola (or crumbled cookies) |
Fool Directions
In a bowl stir the raspberries, sugar and water (or booze) and let it sit for a few minutes. This lets the raspberries softened a bit.
Whip the cream with the powdered sugar to medium peaks.
Mash the raspberries with a fork until all of the liquid and fruit are mashed together.
Spoon half the fruit into the cream and fold one or twice with a rubber spatula. Don't over mix it, you want it to look multi-coloured.
With a fancy glass (like a martini glass or dessert cup) spoon a dollop of the raspberry puree into the bottom. Then add a dollop of the whipped cream/raspberry mixture, then add some granola (or crumbled cookie if you prefer). Repeat by adding another dollop of the whipped cream mixture, then the raspberries puree.
Serve and enjoy.
This dessert is best enjoyed if prepared right before serving.
