Italian "S" Cookie

Ingredients

Dough

2 1/2 cups Frankie's gluten-free all-purpose flour blend
1 tsp baking powder
1/4 tsp Kosher salt
2 lg eggs
1/2 cup white sugar
1/3 cup olive oil
1 tsp vanilla extract
1 whole lemon zested

Egg wash

1 lg egg yolk
1 tsp milk
2 tsp turbinado sugar

Italian "S" Cookie Directions

Pre-heat oven to 350°F or 175°C.

In a mixing bowl sift together the Frankie's gluten-free all-purpose flour, baking powder and salt.  Set aside.

In a large mixing bowl whisk the eggs either using a stand mixer or electric mixer.  Whisk together for 3-4 minutes or until the egg mixture is nice and frothy.

Add the sugar and continue to whisk until everything is really well combined and slightly thickened (about 2 minutes)

Add the olive oil, vanilla extract and the zest from your lemon.  Combine well.

Add the dry sifted ingredients to the wet ingredients and mix well with a spatula or wooden spoon until well combined.  The dough will be soft.

Scoop the dough out onto your counter and take 2 tbsp sized amounts and roll them into roughly 6 inch (15 cm) long logs.  You might need to lightly flour your work surface to prevent sticking, but don't use too much as you don't want the cookie to get tough.

Lay the rolled out cookie onto a parchment lined baking sheet and shape into an S.  Repeat with the rest of the dough  leaving a little bit of space for spreading.

Brush the tops of the cookies with the egg yolk/milk mixture and sprinkle with course sugar.

Bake for 15 minutes or until the bottoms are lightly browned.  Let cool completely before enjoying.

Store in an airtight container for up to 2 weeks.
