Oatmeal Raisin Cookies

Ingredients
Dough
1 cup unsalted butter, softened to room temperature |
1 cup packed light or dark brown sugar |
1/4 cup white sugar |
1 tbsp vanilla extract |
2 lg eggs |
1 tbsp molasses |
1 1/2 cups Frankie's gluten-free all-purpose flour blend |
1 tsp baking soda |
1 1/2 tsp ground cinnamon |
1/2 tsp Kosher salt |
1/4 cup water |
3 cups gluten-free whole rolled oats |
1 cup raisins |
Oatmeal Raisin Cookies Directions
Pre-heat your oven to 350°F or 175°C
In a stand mixer combine the butter and sugar and beat until light and fluffy. Add eggs and vanilla, water and molasses and beat until well combined. Scrape down the sides of the bowl and add in all of your dry ingredients.
Beat well and then scoop tablespoon size pieces onto a greased or parchment paper lined baking sheet and bake for 8-10 minutes.
