Red Velvet Cookies with Cream Cheese Icing
These are a great addition to any recipe book, especially if you've ever wanted a cookie with a fun gooey centre.

Ingredients
Filling
250 g cream cheese, softened |
1/2 cup icing sugar |
1 tsp vanilla extract |
1 pinch Kosher salt |
Dough
1 1/4 cups Frankie's Gluten-Free All-Purpose Flour Blend |
1/4 cups cocoa powder, sifted |
1/2 tsp baking powder |
1/2 cup butter, unsalted, softened |
1/2 cup white sugar |
1/2 cup brown sugar, lightly packed |
1 lg egg |
3 drops red food dye |
Red Velvet Cookies with Cream Cheese Icing Directions
Pre-heat oven to 350°F or 175°C.
In a mixing bowl combine cream cheese, icing sugar, vanilla and salt. Blend together until well mixed and no lumps are left. Refrigerate until needed.
In another mixing bowl combine flour, cocoa powder and baking powder. Whisk together. Set aside.
In another mixing bowl beat using an electric mixer, or stand mixer the butter and both sugars until light and fluffy. Beat in the eggs and food colouring.
Add dry ingredients and combine until smooth. (When using gluten-free flour, like Frankie's gluten-free all-purpose flour blend you don't have to worry about the dough becoming tough, so beat away and make sure that everything is really well blended).
Using your hands, shape 2tbsp sized balls of dough and flatten with your hands into disks. Place 1 tsp of cream cheese icing filling in the centre of each disk. Fold dough over and seal the edges and form into balls. Place balls 2 inches apart on a parchment paper lined baking sheet. Repeat with the remaining dough and icing.
Bake until the cookies are no longer shiny (about 15 minutes). Let cool on the baking sheets. Let cool completely before enjoying. These can be stored in an airtight container at room temperature for up to 3 days. Freeze for getting them to last even longer.
