Zucchini Bread/Loaf
Super easy

Sink your teeth into this amazing zucchini loaf.  Nobody will guess that the main ingredient is zucchini either.

Ingredients

The Loaf

1 1/2 cups Frankie's gluten-free all-purpose flour blend
2 tsp baking powder
1 tsp Kosher salt
1/2 tsp baking soda
1/2 tsp nutmeg, freshly ground
1/4 cups white sugar
1/4 cups brown sugar, packed
1 cup zucchini, grated
2 lg eggs
1/3 cup light vegetable oil (like canola)
2 cups cheese, old aged and grated

Zucchini Bread/Loaf Directions

Start by pre-heating your oven to 350°F or 175°C.

Lightly butter and parchment paper line a loaf pan (9x5 inches or 2L).

 

In a large bowl combine your flour, salt, baking powder, baking soda, sugars and nutmeg.  Mix.  Then add in your zucchini and cheese.  Mix.  Then add your eggs and vegetable oil.  Mix well.

Pour/scoop the mixture into your loaf pan and smooth the top.  Put in the centre of your oven and bake for about 45-55 minutes, or until a skewer comes out clean.  If after a bit you notice that the top of the loaf is starting to get too brown, cover loosly with tinfoil and continue cooking until the loaf is fully cooked.

When baked, remove from oven and let cool until you're able to remove it from the load pan and let it finish cooling on a cooling rack until room temperature.

 

This is terrific served at room temperature.
