Peach Crostata
Super easy

Sink your teeth into this peach crostata.  It really is as tasty as it looks.  Why wait any longer, grab a bag of Frankie's gluten-free flour blend and bake along with me.

Ingredients

Filling

5 lg peaches, pitted and sliced 1/2 inch thick.
2 tbsp Frankie's gluten-free all-purpose flour blend
2 tbsp white sugar
1/2 tsp Kosher salt
6 tbsp brown sugar
1/2 tsp vanilla extract
1 pinch cinnamon

Garnish/Topping

2 tbsp heavy cream
2 tbsp turbinado sugar or other coarse sugar

Peach Crostata Directions

Preheat your oven to 425°F or 220°C

In a medium bowl toss the items from the peach mixture together and stir to combine.  Set the bowl aside.

And on a well floured surface roll out the dough to roughly a 30cm or 12 inch round disk.  The pastry should be about 3-4mm / 1/4inch thick. 

Transfer the pastry to a piece of parchment paper on a baking sheet.

Mound and spread evenly the peach mixture up on the dough leaving about 1inch/2.5 cm (at least) around the edges.  Fold the edges on top of the peaches to create a bit of a pastry edge to keep everything together when it bakes.

Lightly brush the dough with cream and sprinkle with turbinado sugar.  Bake in your oven for about 25 minutes or until the crust is golden and the peaches are bubbling.  Let it cool for at least 15 minutes before serving.
