Pancakes
Whether it's a main or a treat, this is the go-to recipe for making pancakes in my home. Enjoy.

Ingredients
Batter
| 1 cup Frankie's gluten-free all-purpose flour blend |
| 1 tbsp baking powder |
| 1 tbsp white sugar |
| 1 pinch Kosher salt |
| 1 lg egg |
| 1 cup milk, or milk alternative |
| 3 tbsp light salad oil, light canola or vegetable. |
Pancakes Directions
Start by pre-heating a heavy pan on the stove on medium heat.
In a large mixing bowl combine all of your dry ingredients and whisk together. Then add your wet ingredients and whisk everything really well together. At this point you can add slices of: berries, banana, apple, peach, or even chocolate chips. Be creative. Whisk it all together.
When the pan is hot turn it down to medium-low and add a dollop of butter and stir it around. Let the butter coat the pan. Add a spoonful of the batter to the pan to create a pancake. Let it cook on one side (about a minute and a half) or until small bubbles appear on the surface. You're looking for a slightly solid looking top of the pancake. Flip the pancake and allow the pancake to cook on the other side. It won't take as long as most of the cooking took place on the first side of the pancake.
Remove the pancake from the heat and repeat until all of your pancakes are cooked.
Serve with icing sugar, maple syrup, fresh fruit... the list is endless. Be create and enjoy making pancakes... or let the kids make you them.

Alternatively you can take most of the measuring out of it and Frankie's has a pancake and waffle mix, just add milk, egg, oil and whisk and you've got pancake batter.
