Quinoa Bites
A Quick and Flavorful Snack
In this YouTube recipe, I demonstrate how to make savory quinoa bites that are perfect for snacking or as a side dish.

Ingredients
Bites
2 cups cooked quinoa |
2 LG Eggs |
1 cup grated carrot |
2 stalks green onions |
2 cloves minced garlic (or 2 Tbsp garlic scapes) |
1/4 cups chopped cilantro |
1/2 cup grated parmigiano reggiano cheese |
2 tbsp Frankie's gluten-free all-purpose flour blend |
1/2 tsp Kosher salt |
1/4 tsp ground black pepper |
Quinoa Bites Directions
Start by pre-heating your oven to 350°F or 175°C.
Make quinoa as per instructions on bag. I make it the following way: Rince the quinoa really well, then for every 1 cup of dry quinoa I add 1.25 cups of water.
Mix all ingredients together in a bowl. Spoon the mixture into lightly oil brushed muffin tins filling each to the top. Flatten and create a small indentation to allow for putting something in when finished baking. Bake in oven for 15-20 minutes or until golden brown and bites are firm to the touch.
Remove from heat and let cool. Remove from pan and serve immediately with your choice of filling like cream cheese and green onion, or tuna/chicken salad, caviar, smoked salmon...or any other combination you like.
If you don't use all of the bites you can store these in an airtight container for up to a week in the fridge.
