Jamaican Patties Directions
Pre-heat a skillet pan.
Melt butter in pan, then add onions and cook until soft. Add ground meat and stir continuously to cook meat through. Add spices, salt and pepper and stir. Stir in bread crumbs and stock and stir until most of the liquid has been absorbed.
Turn off heat and set aside.
Preheat oven to 400°F or 200°C
In a stand mixer combine flour, salt, and butter. Blend until butter resembles small peas. Add egg and stir. Add in up to 1/3 cup water until the pastry comes together.
Divide the dough into 10 equal portions and roll into balls. Flatten each ball onto a silicone mat or piece of parchment paper. Flatten to 2-3mm 1/8inch thickness.
Whisk an egg in a small bowl.
Lightly brush the outside edge of the pastry.
Spoon about 2 tablespoons worth of filling onto pastry. Then using the silicone mat, fold the pastry in half covering the filling and getting the edges to touch each other. Keeping the silicone mat over the patty, firmly press the edges to ensure a tight seal. Un-fold the silicone mat from the top and lightly press the edges of the patty with a fork leaving score marks.
Transfer to a parchment paper lined baking sheet. Repeat with all 10 pastry balls.
Brush the tops of the patties with egg wash to give a nice finish on the pastry and to seal and cracks that may have appeared.
Bake for approximately 30 minutes or until golden brown.
Enjoy with rice and peas, a side salad or just on its own. Can be enjoyed cold, but best enjoyed warm/hot.
Can last in the fridge for up to 3-4 days, however freeze them and enjoy when you have a desire for Jamaican patties.
I used Frankie's gluten-free all-purpose flour blend. It works cup-for-cup with pretty much any recipe that I throw at it. Get your own bag and you'll love it. Order at: www.glutenfreefrankies.com or visit: Amazon (just search for "Frankie's Flour").
