Sugar Cookies
Super easy

Eggs, sugar, flour, butter and vanilla.  What's not to like about these cookies?  They're delish.

Ingredients

For 1 Batch(es)

Dough

1 cup unsalted butter, softened
1/2 cups white granulated sugar
1 LG egg
1 tsp vanilla extract
2 3/4 cup Frankie's Gluten-Free All-Purpose Flour blend
1 pinch Kosher salt

Icing

3 cups powdered icing/confectioners sugar, sifted
5 Tbsp milk
1 tsp vanilla extract

Sugar Cookies Directions

Combine butter and sugar in a mixing bowl and beat until well combined and butter is light in colour.  Then add egg and vanilla and beat until well combined.  Add Frankie's gluten-free All Purpose Flour blend and Kosher salt and mix until a dough forms.

Roll between two pieces of parchment paper to 1/4 inch (5-6mm) thickness.  Refrigerate until firm (about 2 hours).

Preheat oven to 350°F or 150°C

Remove dough from fridge and remove parchment paper and place on lightly floured counter.  Lightly flour to top as well and roll out to make sure the dough is even.  Cut out your favourte shapes and place on parchment paper lined baking sheet making sure to evenly space the cookies and don't let them touch either.

Bake for approximately 10 minutes or until golden brown.  Let cool and then transfer to a wire rack to completely cool.

 

Icing:

Combine ingredients and blend until a thick icing is achieved.  You want a consistency of thick pudding.

 

Put icing into an icing bag with a #5 round piping tip.  Pipe around the edges of the cookie and then fill in the cookie.  Use a spoon or toothpick to spread the icing around on the cookie to event distribute the icing.

Add your favourite decorations like sprinkles.

 

*NOTE: You can tint your icing to any colour you like by adding a few drops of food colouring when making the icing.
