Orange Creamsicle Cupcakes

| 1 1/2 cups FRankie's gluten-free all-purpose blend |
| 1 tsp baking powder |
| 1/4 tsp Kosher salt |
| 1/2 cup butter, unsalted, softened |
| 3/4 cup white sugar |
| 2 lg eggs |
| 1 zested orange |
| 1/4 cup fresh orange juice |
| 1/2 cup milk |
| 1 tsp vanilla extract |
Frosting
| 1/2 cup butter, unsalted, softened |
| 2 cups icing sugar |
| 2 tbsp whipping cream |
| 1 tsp orange zest |
| 1/2 tsp vanilla extract |
Orange Creamsicle Cupcakes Directions
Begin by preheating your oven to 350°F or 175°C. Line a muffin tin with cupcake liners.
Cupcakes: In a bowl whisk together the Frankie's gluten-free all-purpose flour, baking powder, and salt. In another bowl cream the butter and sugar. Add eggs one at a time to butter/sugar mixture. Mix in orange zest and vanilla.
Now alternate dry ingredients with milk and orange juice. Fill liners 2/3 full and bake for 18-20 minutes. Cool completely.
Frosting: Beat butter until smooth, then add icing sugar gradually. Mix in cream, orange zest, and vanilla. Pipe or spread onto cupcakes.
