Strawberry Yogurt Coffee Cake

Ingredients
Crumb Topping
| 1/2 cup Frankie's gluten-free all-purpose flour blend |
| 1/4 cup brown sugar |
| 1/4 tsp cinnamon |
| 3 tbsp cold butter, unsalted, cubed into small pieces. |
Cake
| 2 cups Frankie's gluten-free all-purpose flour blend |
| 1 tsp baking powder |
| 1/2 tsp baking soda |
| 1/2 tsp Kosher salt |
| 1/2 cup butter, unsalted, softened |
| 3/4 cup white granulated sugar |
| 2 lg eggs |
| 1 cup plain yogurt |
| 1 1/2 cups diced strawberries |
Strawberry Yogurt Coffee Cake Directions
Preheat your oven to 350°F or 175°C. Grease a 9 inch (23 cm) spring form pan.
Mix topping ingredients until crumbly and set aside.
Whisk Frankie's gluten-free all-purpose flour blend, baking powder, baking soda, and salt. In another bowl cream butter and sugar until light. Beat in eggs one at a time, then add yogurt and vanilla. Stir in dry ingredients and fold in strawberries.
Spread batter into pan. Sprinkle topping evenly and bake for 40-45 minutes. Cool before serving.
