Oatmeal Chocolate Chip Cookies

Ingredients
Dough
| 1 cup butter, unsalted, softened |
| 3/4 cup white sugar |
| 3/4 cup brown sugar, packed |
| 2 lg eggs |
| 1 tsp vanilla |
| 2 1/2 cups Frankie's gluten-free all-purpose flour |
| 1/2 cup quick oats |
| 1 1/2 cups chocolate chips |
Oatmeal Chocolate Chip Cookies Directions
Preheat your oven to 350°F or 175°C
Line a cookie sheet with parchment paper and set aside.
Start by combining the butter, sugars, and eggs in a stand mixer and mix until the butter is well combined. Next add the vanilla. In a separate bowl mix the baking soda and the Frankie's all-purpose flour, then add this to the butter mixture and add the oats. Mix until well combined. Scrape the bowl and add the chocolate chips and lightly mix to combine.
Scoop by the tablespoon onto the cookie sheet and bake for 8-10 minutes or until golden brown on the outer edges and soft in the middle. Let sit for a few minutes and then transfer to a cooling rack.
