Simple Syrup Cake
Super easy

This really was one of the easiest cakes I've ever made, and it tasted delicious.

Ingredients

For 1 Batch(es)

Cake

2 cups Frankie's gluten-free all-purpose flour blend
1 1/2 tsp baing powder
1/2 tsp Kosher salt
3 lg eggs
1 cup white sugar
3/4 cup neutral oil (vegetable or canola)
3/4 cup milk
2 tsp vanilla extract

Simple Syrup

1/2 cup white sugar
1/2 cup water
1 tsp grated citrus zest (the zest of one orange, approx)

Simple Syrup Cake Directions

Preheat your oven to 350°F or 175°C

Grease and line a round 8" (20cm) round baking pan.  Set aside.

In a mixing bowl combine the flour, baking powder and Kosher salt.  In another bowl combine the eggs and sugar and beat on high until light and pale.  Add oil, milk and vanilla.  Stir dry ingredients into wet until smooth.

Pour into pan and bake for 40-50 minutes or until a toothpick comes out clean.

While the cake bakes make the simple syrup:

Heat sugar and water in a small saucepan until dissolved, simmer for 1-2 minutes.  Remove from heat and add citrus zest.

When the cake is baked and still warm, poke holes all over with a skewer.  Slowly pour the syrup over the cake.  Let is soak in completely before slicing.
