Date Square
The perfect dessert to take with you or enjoy with a cup of tea. This is my Mother's and my Grandmother's favourite square.

Ingredients
Date Filling
| 3 cups dates, pitted and chopped |
| 1/4 cup white granulated sugar |
| 1 cup water |
| 1 lg orange, juiced and half zested |
Crumble
| 3/4 cup butter, unsalted, cubed |
| 1 cup brown sugar |
| 1 3/4 cup Frankie's gluten-free all-purpose flour |
| 1/2 tsp Kosher salt |
| 1/4 tsp baking soda |
| 1 1/2 cups gluten-free rolled oats |
Date Square Directions
Preheat your oven to 350°F or 175°C
Line a small baking dish/casserole dish roughly in size: 11inches (29cm) X 8inches (20cm), with parchment paper.
Start by adding the chopped dates, sugar, water, orange juice and zest into a heavy bottom sauce pan and heat over medium heat until the dates breakdown. Stir occasionally.
Meanwhile, make the crumble by mixing all of the ingredients together. Mix until well combined.
With roughly half of the crumble place this in the bottom of the pan and press down spreading it around to fill all the corners. You'll want to firmly press this down. If you need a bit more crumble, use it. Make sure you spread the crumble evenly though.
Once the date mixture has dissolved into a paste, spread this onto the crumble in the pan and evenly spread it out trying to get the corners and edges. Make sure this layer is smooth and even too.
Next add the remaining crumble on top and spread it around lightly pressing down.
Bake in your oven for 30 minutes.
Let cool completely before attempting to proceed.
Cut around edges that may have stuck and then cut bars. Serve and enjoy.
These bars can be stored at room temperature in an airtight container for up to 2 weeks.
