Enjoy this rhubarb and citrus salad. Ingredients fresh from the garden.
1 cup fresh young rhubarb |
2 tbsp honey |
2 tbsp white balsamic vinegar |
1 whole orange |
2 whole clementines |
5 cups baby spinach |
1 cup arugula |
2 cups baby pea sprouts |
1/4 cup pumpkin and sunflower seeds |
1 1/2 cups feta cheese, crumbled |
1/4 cups olive oil |
2 stalks green onion, chopped |
1 pinch salt and pepper, to taste |
Gather ingredients.
Chop rhubarb into small pieces (about .5 cm). Place in bowl and mix with honey and vinegar. Set aside.
Remove the skin from the orange and segment into a bowl. Add remaining juice into bowl. Add remaining ingredients (except for salt and pepper) into orange bowl. Lastly pour rhubarb and dressing into bowl. Mix together. Season to taste with salt and pepper.
Serve immediately.
